I currently don’t have an oven (nor a kitchen scale, nor measuring cups…) BUT I can still make a lot of desserts, including stovetop granola! Here’s how I make it.

STOVETOP GRANOLA {vegan except honey}

Recipe

1 cup seeds or 2 tbsp seed butter
1 cup nuts, roughly chopped
1 cup oats
1 tbsp sugar
1 tbsp honey
1 tbsp dark cacao powder
1 large orange
salt
cinnamon
2 tbsp more seeds

 

Method

  1. Toast 1 cup of seeds in a pan or pot over medium heat for just a few minutes, stirring often, until they start becoming golden. Be careful as they burn easily.
  2. Blend the seeds into a creamy butter.
  3. Add to a pot 2 tbsp seed butter, honey, sugar, cacao, salt, cinnamon, orange zest, oats and 2 tbsp seeds. Turn on heat to medium. Stir very well, then squeeze the juice of ½ the orange. Keep stirring until everything is mixed well. If it seems too dry feel  free to add any liquid (not water), maybe some oil, more seed butter, honey or orange juice (I added juice).
  4. Spread out into an even layer onto a flat surface lined with baking paper or foil.
  5. Let air dry for 3-4 hours, turning the granola around and upside down halfway through.
  6. Store in a glass jar or airtight container at room temperature or in the fridge (I prefer fridge).
