Happy Monday friends! Today is a very grey and dark day in Milan. I need to keep a light on as I’m typing this at 11am! I would like to share with you a very simple breakfast recipe idea that I randomly put together a few weeks ago when I made way too much granola. I love chia pudding and I love changing colors so this came out! It’s all very easy, just takes a while.

I used my own granola bars recipe from a few posts back, even if you halve it you will still get lots of it so just keep it in a sealed container or in the fridge/freezer and they will keep for a really long time! I love eating granola on its own as a snack, breakfast or dessert any time of the day.

BREAKFAST BOWL WITH CHIA PUDDING, PINK COCONUT CHIPS AND GRANOLA CLUSTERS {vegan}

Recipe
3 bowls
granola: one 13x20cm/5x8in baking tray
prep time: 15 mins, cook time: 30 mins, total time: 45 mins + overnight

 

Granola clusters
> Follow this recipe (halve it! You will still get lots left) <

300 ml plain soy yoghurt
3 tsp maple syrup

Pink chia pudding
1 cup / 250 ml plant-based milk
2 tbsp chia seeds
2 tbsp beet juice (from a pack of pre-cooked beets)

Method

  1. Combine all ingredients in a sealable glass jar, stir well, cover and let rest in the fridge for a few hours or overnight.

 

Pink coconut chips
handful coconut chips (plain or toasted)
3 tbsp beet juice

Method

  1. In a small bowl combine coco flakes and beet juice (add more if needed), stir and then spread out on parchment paper over a grate to dry. Will take approx. 30 mins.
  2. Serve: take 3 bowls, break a piece of granola into small clusters, add to bowls, then add 100ml yoghurt, a few spoonfuls chia pudding, a few coconut chips and a tsp maple syrup each. Enjoy!
